Pepperoni Pizza Rolls

My children loved these delicious rolls for lunch, and we had fun making them, too.

Here's the recipe for the pizza dough, but you could buy it already made.
3 c flour
1 tsp. salt
2 tsp. olive oil (or cooking oil)
1 c warm water
1 pkg. quick activated yeast
1 tsp. sugar (optional, but we used it)

Dissolve yeast in warm water and add teaspoon of sugar, stir until dissolved. Add this to flour, salt and oil. Stir until well blended. Knead dough for 5 minutes, then let rise covered for 20 minutes in a warm place.

After crust has time to rise a little, form crust for pizza on a greased cookie sheet. Use your pizza cutter to cut the dough into squares. In a small bowl combine 1 tsp. of garlic powder, 1 stick of soft butter and 1 Tbsp of Parmesan cheese. Spread garlic mixture over the rolled out dough squares. (Save the extra mixture for garlic bread on spaghetti night.) Layer pepperoni slices (We used turkey pepperoni.) and mozzarella cheese on each square. Of course, you could be creative with anything else you want to insert in the roll.

Fold up the corners and pinch closed.

Bake in a 400 degree Fahrenheit oven for 15 minutes. Let cool and eat. We made 8 rolls with this recipe. Yummy!

Looking back I think it would taste nice with a little Parmesan cheese sprinkled on top of the dough, but my children said not to change a thing.
