Delicious Holiday Ginger Cookies

For years this cookie has been a favorite.  This cookie is consumed every time it is placed out for company.  Creating these cutouts is absolutely enjoyable.  It is a family affair.  Enjoy!

Delicious Holiday Ginger Cookies
Cookie ingredients:
1 1/4 c sugar
1 c unsalted butter, softened
1 egg
1 tsp vanilla
3 Tbsp molasses
3 c flour
2 tsp. cinnamon
1 tsp. ground ginger
1/2 tsp. baking soda
1/4 tsp. salt
Frosting ingredients:
3 c powdered sugar
1/3 c unsalted butter, softened
1 tsp. vanilla
6-8 Tbsp half & half

Combine sugar, butter, egg, molasses & vanilla.  Beat at medium speed until creamy.  Reduce speed to low and add all remaining cookie ingredients.  Beat until well mixed.  Divide dough in half and wrap in plastic wrap.   Refrigerate for about 1 or 2 hours.  Heat over to 375 degrees Fahrenheit.  Roll out dough on a floured surface to 1/8 inch thickness.   Use cookie cutters and place cut outs on an ungreased cookie sheet 1-inch apart.  Bake for 6-9 minutes.  Let stand 1 minute and remove from cookie sheet.  Cool completely.  Mix frosting ingredients to desired spreading consistency.  Decorate cooled cookies with frosting.

Yields approximately 2 dozen cookies depending on the size of your cut outs.  Have fun with it.
