This delicious tea biscuit has only one problem: it only makes eight big biscuits. I'm sure you can solve the problem.
1 3/4 cups flour
3/4 cups sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
5 Tablespoons chilled, unsalted butter, cut into pieces
7 Tablespoons half & half or cream
1 large egg, beaten
1/2 cup cranberries*, dried (craisins), fresh or frozen
1/2 cup white chocolate chips
Stir flour, sugar, baking powder, salt and butter. Add half & half, egg, cranberries and white chocolate chips and stir. The dough will be sticky. Divide the dough into eighths and place onto a greased baking sheet. Bake at 400 degrees for 14-16 minutes until golden brown.
*Notes: I used craisins and served the tea biscuit warm. Everyone said I should make these biscuits again. Enjoy!
