Make-Ahead Christmas Ham, Egg & Cheese Egg Bake
Notice I have no photo for this recipe. It's because it was gone before I could take one. You could win a prize for this no-hassle egg casserole. I like to make an egg bake on Christmas so that I can enjoy the whole day with my family. While the gifts are being opened, the casserole is making the whole house smell delicious. Everyone knows their tummies will soon be satisfied with a scrumptious breakfast casserole.
Ingredients:
4 eggs, slightly beaten
2 1/4 cups of milk
1 10.75 oz. can cream of mushroom soup
1 8 oz. block of cheddar cheese, shredded (Swiss would do just as well)
1 10 oz. box of chopped spinach, defrosted and drained
1 tsp. of dry mustard
1 6 oz. bag/box of seasoned croutons
2 cups of cooked ham (I used the leftovers from a ham dinner)
1/4 cup of onion, chopped
1/4 cup of crushed pineapple, drained
Directions:
Spray 9x13 casserole dish with cooking spray. Place seasoned croutons on the bottom of the dish. Layer the cooked ham on top of croutons. Then in a mixing bowl add eggs, milk, soup, cheese, spinach, mustard, onion and pineapple. Once these ingredients are mixed pour over ham and croutons in the casserole dish. Cover and refrigerate for up to one day. When ready to cook, uncover the dish and preheat oven to 325 degrees Fahrenheit. Cook for one hour. Let set for five minutes before cutting. Enjoy!
Christmas morning couldn't be more hassle-free. Spinach-haters beware! Onion-haters you'll never know! My daughter and son do not like spinach that much, but in this dish they gave me no fuss. Believe me they both had a fair serving and their dishes were clean -- not a lick to pick. Clean up is a cinch, too. Let me know of your success with this one.

Welcome Granny and Polly
Follow this simple, kid-friendly recipe to make your own pumpkin puree. You can can it or freeze it for up to one year. Without the Spadano's pumpkin this video would not be possible. Thank you very much! We had so much fun and saved all the seeds for next year.

EXTRA! EXTRA! READ ALL ABOUT IT!
My God is so good.
Way back in February of this year my husband and I started looking for a full-size violin for our daughter. We knew this day would come: shopping for a decent violin, but we were reluctant to dive in and take the plunge for three main reasons. First of all, our daughter's attitude towards the instrument was teeter-tottering. Of course, money is a major factor when buying any instrument, and this was no different especially when her attitude showed little excitement about the idea. Finally, we were wondering since our daughter's passion is the piano, perhaps it was not God's will for her to play two instruments. Perhaps we were pushing our way, not God's way. What do you do in a situation like this? You do the logical thing. You pray. In fact I will quote the entry I made in my prayer journal on March 18, 2011. Request: "new nice violin for Heidi."
As my daughter continued with violin lessons, her teacher continued to mention to us the need for a full-size violin. I had no money and saw no way of getting any quick. I was praying, but as the prayer continued I realized I wasn't even sure if what I was praying for was God's will, so my request changed a little. On April 19, 2011 my prayer journal entry read, "If (God) you want Heidi to continue w/violin, please provide the violin." In addition to praying, I mentioned to my daughter my prayer request. Pleadingly I asked her to pray the same prayer with me. At first, she reluctantly agreed to pray the same prayer. She was reluctant to pray this way because she knew if God gave us a violin, then she knew she would have to practice and take it seriously: no arguments.
On April 25, 2011 my praying in this matter continued to change. I now was growing in my faith with regards to this so my entry became very specific. It read, "to know Your will free violin for Heidi ... by May 14, 2011." The deadline to sign up for the fall lessons was May 15, 2011. I shared all of this with Heidi, too.
As lessons continued the teacher told us that the violin is holding her back. May 9 was the day we had scheduled with the music school to sign our children up for piano lessons. Since there was no violin, we did not sign Heidi up for violin lessons in the fall. On Monday night, Emily, who is the music school's registrar, told us that the school may have a violin they could loan us for FREE. We would be responsible for maintenance, but everything else would be free. We would turn the violin back to the school when we terminated lessons there. We could see God working before our eyes. How wonderful!
On Tuesday, May 10, 2011. God kindly, directly and specifically answered my prayer. Heidi went to her lesson. The teacher went into a closet and showed Heidi two decent violins. Heidi choose the violin she liked best. Inside the case was a chin rest, rosin (a very expensive kind), and even a nice bow. God gave us for free a violin, a bow, a chin rest, a violin case, and rosin all before the deadline I requested of Him. Heidi KNOWS it is God's will for her to continue violin lessons. Do you see how good my God is? It is worth reading all about it. Extra: God also gave us on May 10, 2011 a extraordinary lead on a decent violin, bow and case for under $1000. Let me say it again: My God is so good!

A Fun Week
Wednesday night, Claire, Grace, Hannah, and I took some pictures together. This isn't all of them, just a few. See if you can spot the 'stranger' in them.
Mr. Sanderlin!
He laughed, "I couldn't resist! Ha! Ha!"
Cape May Zoo Field Trip
We went to the Cape May Zoo yesterday. (Thursday) It was a lot of fun. Here is my photo collection of the zoo animals.
We saw a lot of birds: parrots, crows, flamingos, all sorts of creatures. They also had a lion, tiger, bear, three giraffes, and some zebras. To me, I thought that those animals were the most fascinating. (Sorry, but I didn't get any pictures of the lion, tiger, bear or cheetahs. They were too far away to get a good picture.)
This little guy (below) is the largest rodent in the world. If you ask me, I think that he looks like a pig. His weight can range between 77-175 pounds. I thought that was pretty neat.My dad said that the best thing about the Cape May Zoo is that it's free. Pack a picnic lunch, and enjoy the day.
After we went to the zoo, we decided to take a look at the point of Cape May and lighthouse park. I enjoyed taking pictures of the ocean.
This was my favorite picture. It shows the rocks, and the white sea foam. How beautiful!
My dad took some pictures of a sunken cement ship. (No wonder it sank!) Then he took some photos of me and Claire by the ocean.
Lighthouse Park
This is a great place to go bird watching. Claire and Thomas are studying birds in their science, so, of course, they enjoyed identifying different birds. This is the lighthouse.
Here's me by the lighthouse.
While Claire and my mom bird watched, (I sat on a bench, bored) Andrew, Thomas and my dad went to see a World War II bunker. What a fun day!
